Baked Garlic I love what baking does to garlic… it mellows the flavor and creates an awesome ingredient that enhances so many diverse dishes. I use it so much in catering that I usually bake 10 or more bulbs of garlic at a time, and then save them for when needed. Here is the recipe that I use… it is easy/peasy: https://www.justapinch.com/recipes/sauce-spread/seasoning-mix/cooking-essentials-baked-garlic.html

Liquid Aminos In many of my recipes, I recommend using liquid aminos or Tamari sauce as opposed to using soy sauce. Liquid aminos and Tamari sauce are lighter versions of soy sauce and are gluten-free (although you might find some versions of Tamari sauce that contain small amounts of wheat). To me, they add brighter flavor notes with a hint of citrus to Asian dishes than traditional soy sauce. If you are planning on using standard soy sauce, then cut the recipe's recommended amount by about half.

Add the sesame seeds to a hot, dry pan, and stir until they begin to brown and smell fragrant, about 60 seconds.

When cool, add to a spice blender and blend until finely ground.
  • Step 7
Do not continuously blend, but use short 1-second pulses until ground.
  • Step 8
Place all of the ingredients into a non-reactive container, like a mason jar, seal, and shake to blend together.
