- PRE-MIX
- 1/2 cup buttermilk pancake mix
- 1/2 cup fine soda cracker crumbs
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1 1/2 teaspoons commercially prepared seasoned salt
- 1/4 teaspoon black pepper
How To Make universal "home brew" shake & bake coating

Step 1Combine all mix ingredients. Mix well Soak or dip fish in water, beer, or beaten egg mixture before coating.

Step 2Alternate Recipe: Dip fish fillets in beaten eggs, then roll in potato flakes. Season with salt, pepper, and paprika. For a different taste try dipping the fried fish in sweet pickle juice.

Step 3Alternate Recipe: Place skinned and filleted freshwater drum in lemon juice for 1/2 hour. Roll in flour, salt, pepper, and paprika before frying. When served cold they taste almost like a pork chop.
