Love this! This is the cucumber white sauce that you get in Greek restaurants with your Souvlaki or Gyro. Serve also with pita bread, crackers, vegetable fritters, meatballs, and raw veggies.

Ingredients

  • 3 cups plain yogurt
  • 1 - cucumber, peeled and finely chopped
  • 3-4 cloves garlic, finely minced
  • 1/4 teaspoon sea salt
  • 3-4 tablespoons olive oil
  • 3 tablespoons fresh dill, finely chopped

How To Make tzatziki

  • Step 1
    Line a strainer with cheesecloth or a double thickness of paper towels.
  • Step 2
    Spoon yogurt into strainer and let drain over a bowl in the refrigerator for about 6 hours.
  • Step 3
    Discard the liquid in the draining bowl.
  • Step 4
    Tranfer strained yogurt to a bowl, stir in cucumber, garlic, salt, and oil.
  • Step 5
    Cover and chill.
  • Step 6
    Serve in a shallow bowl, sprinkled with dill.
