As my chemo draws close to ending, my anemia is ramping up and I need iron rich foods I can tolerate eating. This spin on spinach and salsa cheese dips was just the thing for me. I created this with ingredients I had on hand tonight.

What a delicious and easy dip recipe. I love the rich flavor of the spinach and the gooey cheese. The celery gives this dip a nice crunch. This will get gobbled up fast at any party. So good!

Ingredients

  • 1 cup mayo (or Miracle Whip)
  • 1/2 cup + 2 tablespoons Parmesan cheese, divided
  • 1/4 pound Velveeta cheese, cubed
  • 8 ounces spinach, well drained
  • 1/4 cup salsa, any style
  • 1/3 cup celery diced
  • 1 tablespoon onion diced
  • - paprika for color
  • - assorted dippers, crackers, vegies, tortillas, pretzels etc.

How To Make spinmex dip

  • Step 1
    Mix all ingredients in a bowl.
  • Step 2
    Spray a 2-quart casserole dish with Pam. Pour/spread mixture into pan. Sprinkle top with remaining 2 tbsp. Parmesan cheese and some paprika for color.
  • Step 3
    Bake @ 350* for 35 minutes until cheese is melted and bubbly.
  • Step 4
    Serve with crackers, tortillas, or veggies.
