spinmex dip
As my chemo draws close to ending, my anemia is ramping up and I need iron rich foods I can tolerate eating. This spin on spinach and salsa cheese dips was just the thing for me. I created this with ingredients I had on hand tonight.

What a delicious and easy dip recipe. I love the rich flavor of the spinach and the gooey cheese. The celery gives this dip a nice crunch. This will get gobbled up fast at any party. So good!

Ingredients
- 1 cup mayo (or Miracle Whip)
- 1/2 cup + 2 tablespoons Parmesan cheese, divided
- 1/4 pound Velveeta cheese, cubed
- 8 ounces spinach, well drained
- 1/4 cup salsa, any style
- 1/3 cup celery diced
- 1 tablespoon onion diced
- - paprika for color
- - assorted dippers, crackers, vegies, tortillas, pretzels etc.
How To Make spinmex dip

Step 1Mix all ingredients in a bowl.

Step 2Spray a 2-quart casserole dish with Pam. Pour/spread mixture into pan. Sprinkle top with remaining 2 tbsp. Parmesan cheese and some paprika for color.

Step 3Bake @ 350* for 35 minutes until cheese is melted and bubbly.

Step 4Serve with crackers, tortillas, or veggies.
