spinach and feta pinwheels

When I flew out to my friend's wedding I was asked if I had any ideas for appetizers for the event 2 days away. So, I turned to an old standby....the pinwheel. I had made Mexican and Seafood many times but this one was new. It is an easy, tasty treat. The filling can also be used for a dip with pita chips or crackers.

Ingredients

  • 1 cup cream cheese, room temperature
  • 1 cup sour cream or greek yogurt
  • 1 box frozen spinach, thawed and drained very well
  • 1 cup feta cheese, crumbled finely
  • 1 - lemon, juiced
  • 1-2 clove garlic
  • 1 can black olives, chopped (small can)
  • 1 package spinach wraps or tortillas (i prefer 10 in.

How To Make spinach and feta pinwheels

  • Step 1
    Mix cream cheese and sour cream until smooth. Add the remainder of the ingredients. Combine thoroughly. Spread on spinach wraps or tortillas of your choice. Roll into tight rolls.
  • Step 2
    Wrap in cling wrap for a couple hours. Slice into about 1/2 in. pinwheels. Using an electric knife works very well.
  • Step 3
    This same filling can be used as dip. To make it a little softer either add less cream cheese and more sour cream or add 2 T. Milk.
