  • 2 (15oz) can(s)
    sweet corn
  • 8 oz
    pepper jack cheese (shredded)
  • 8 oz
    cream cheese, room temperature
  • 8 oz
    mild cheddar(shredded)
  • 3 divided Tbsp
    butter or margarine
  • 3/4 c
    regular mayonnaise
  • 1-3 tsp
    pickled jalapenos(diced)
  • 2 Tbsp
    jalapeno pickling liquid
  • to taste
    salt and pepper

How to Make Spicy corn dip aka "Cowboy Crack"


  1. First heat oven to 350°. Open and drain cans of corn.
    Next place softened cream cheese, all of pepper jack cheese, and half of cheddar cheese in a bowl and combine well. Then add in mayonnaise, pickling liquid, jalapenos, salt n pepper. Mix well. Fold in corn. Mix till everything looks evenly mixed
  2. Butter a casserole dish with 1Tablespoon of butter. Pour mixture into dish. Sprinkle remaining cheese over top and dot with remaining 2Tablespoons of butter. Bake in oven 350° for 15 minutes till nice and bubbly. Let cool slightly and serve warm or at room temperature with tortilla chips
