Ingredients
- 2 (15oz) cans sweet corn
- 8 ounces pepper jack cheese (shredded)
- 8 ounces cream cheese, room temperature
- 8 ounces mild cheddar(shredded)
- 3 divided tablespoons butter or margarine
- 3/4 cup regular mayonnaise
- 1-3 teaspoon pickled jalapenos(diced)
- 2 tablespoons jalapeno pickling liquid
- to taste - salt and pepper
How To Make spicy corn dip aka "cowboy crack"

Step 1First heat oven to 350°. Open and drain cans of corn. Next place softened cream cheese, all of pepper jack cheese, and half of cheddar cheese in a bowl and combine well. Then add in mayonnaise, pickling liquid, jalapenos, salt n pepper. Mix well. Fold in corn. Mix till everything looks evenly mixed

Step 2Butter a casserole dish with 1Tablespoon of butter. Pour mixture into dish. Sprinkle remaining cheese over top and dot with remaining 2Tablespoons of butter. Bake in oven 350° for 15 minutes till nice and bubbly. Let cool slightly and serve warm or at room temperature with tortilla chips
