spicy beer cheese sauce

This sauce came about as I made Kelli Thomas's, Sweet Sloppy Joes from Just A Pinch and took it to work for a pot luck. Another lady there brought a spicy cheese sauce and chips BUT everyone put her sauce on my Sloppy Joes including myself and it was magic! It was really good and so I have been asked to make these again. I definitely will, with the sauce! Can use this sauce for tortilla chips or soft pretzels as well.

Ingredients

  • 1 - bottle (12 oz.) beer
  • 2 cups (8 oz.) shredded sharp cheddar cheese
  • 1 tablespoon all-purpose flour
  • 8 ounces cream cheese, at room temperature
  • 1 - clove garlic, minced
  • 1 - jalapeño, minced (& seeded, if you wish)
  • - salt and pepper, to taste

How To Make spicy beer cheese sauce

  • Step 1
    Add beer to a medium saucepan set over medium heat and bring to a boil. While you're waiting, toss the cheddar cheese with the flour. Once beer is simmering, whisk in the reserved cheese and all of the remaining ingredients. Whisk regularly until the cheese has all melted and you have a smooth, creamy sauce. Hold warm until ready to serve.
  • Step 2
    You can keep the cheese sauce in a small crockpot on warm.
