smokey spinach dip

This dip has a nice smokey flavor, thanks to the bacon. They're perfect w/ crisp pita chips.

Ingredients For smokey spinach dip

  • 5 slice
    bacon
  • 1 Tbsp
    olive oil
  • 2 c
    sliced mushrooms
  • 1 sm
    onion, finely chopped
  • 2 tsp
    minced garlic
  • 1 Tbsp
    red wine vinegar
  • 1 Tbsp
    dijon mustard
  • 1/4 tsp
    pepper
  • 3 c
    chopped spinach leaves
  • 1
    3 oz pkg cream cheese, softened
  • 1/2 c
    lite sour cream
  • 2 Tbsp
    milk

How To Make smokey spinach dip

  • 1
    Cook bacon in lg skillet until crisp. Drain on paper towels. Crumble 4 slices and set aside. Crumble remaining slices, cover and set aside for garnish.

    Remove drippings from pan. Add oil to pan, add mushrooms, onion and garlic. Cook over medium heat until mushrooms are tender. Stir in vinegar, mustard and pepper.

    Stir in spinach, cook, stirring until spinach is wilted. Add cream chees. Cook, stirring until melted. Remove from heat. Stir in sour cream and milk, stir until smooth. Stir in 4 slices crumbled bacon. Transfer to a serving bowl. Cover, chill 4 hrs. Before serving, stir well and top w/ remaining bacon crumbles. Serve w/ crisp pita chips.
