Ingredients
- 5 slices bacon
- 1 tablespoon olive oil
- 2 cups sliced mushrooms
- 1 small onion, finely chopped
- 2 teaspoons minced garlic
- 1 tablespoon red wine vinegar
- 1 tablespoon dijon mustard
- 1/4 teaspoon pepper
- 3 cups chopped spinach leaves
- 1 - 3 oz pkg cream cheese, softened
- 1/2 cup lite sour cream
- 2 tablespoons milk
How To Make smokey spinach dip

Step 1Cook bacon in lg skillet until crisp. Drain on paper towels. Crumble 4 slices and set aside. Crumble remaining slices, cover and set aside for garnish.

Step 2Remove drippings from pan. Add oil to pan, add mushrooms, onion and garlic. Cook over medium heat until mushrooms are tender. Stir in vinegar, mustard and pepper.

Step 3Stir in spinach, cook, stirring until spinach is wilted. Add cream chees. Cook, stirring until melted. Remove from heat. Stir in sour cream and milk, stir until smooth. Stir in 4 slices crumbled bacon. Transfer to a serving bowl. Cover, chill 4 hrs. Before serving, stir well and top w/ remaining bacon crumbles. Serve w/ crisp pita chips.
