It's always fun to visit my sister and her family in South Carolina. Not only is there a lot to see and do, but the food is just the best. One of my new favorite snacks is pimento cheese. This is my brother-in-law's recipe. It is good with crackers or vegetables. If you are following the Keto diet, you can serve it with pork rinds.

Ingredients
- 8 ounces cream cheese, softened
- 1/2 cup mayonnaise
- 2 cups extra sharp cheddar, shredded (preferably cracker barrel)
- 4 ounces diced pimentos, drained
- 2 medium jalapeno peppers, finely diced
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon smoked paprika
- - pink himalyan salt & black pepper to taste

Step 1Combine the mayonnaise, cream cheese, peppers, pimentos, and spices.
