peggi's spinach dip

A specialty of mine. Served this in a restaurant also. We also make it at our annual cook out every year because everyone requests it. Hundreds of versions out there. This is mine. Serve warm with pita chips or Mission chips.

Ingredients

  • - 8 oz. cream cheese
  • - 8 oz. velveeta cheese
  • - 8 oz. (2 cups) shredded mozzarella cheese or cheddar / mozzarella mix
  • 6 pieces - cooked bacon, crumbled
  • - 1 frozen box of chopped spinach, thawed & drained
  • - 1 medium tomato chopped fine or 1 can rotel, drained
  • - 1 small onion (green, white, yellow or red) chopped fine
  • - salt to taste

How To Make peggi's spinach dip

  • Step 1
    COOK BACON & CHOP UP OR CRUMBLE. SET ASIDE.
  • Step 2
    LET SPINACH THAW OUT. SQUEEZE OUT & DRAIN. PUT ALL INGREDIENTS, EXCEPT TOMATOES & ONIONS & BACON, IN LARGE MICROWAVEABLE BOWL & HEAT ON HIGH IN MICROWAVE UNTIL ALL CHEESE IS MELTED. TAKES ABOUT 6-8 MINUTES. STIR EVERY 2 MINUTES TO KEEP IT FROM SCORCHING.
  • Step 3
    TAKE OUT OF MICROWAVE & ADD THE GREEN ONIONS, TOMATOES & BACON.Salt well to taste. This is what really flavors it. SERVE WARM WITH PITA CHIPS OR MISSION CHIPS.
  • Step 4
    ONE OPTION IS TO PLACE DIP IN A HOLLOWED OUT ROUND LOAF OF CRUSTY ITALIAN BREAD. CUT TOP OFF OF BREAD SO BOTTOM LOOKS MUCH LIKE A BOWL. USING HAND, SCOOP OUT BREAD INSIDE, LEAVING MOSTLY JUST CRUST. FILL WITH SPINACH DIP & SERVE THAT WAY. EAT THE BOWL AFTERWARDS.
