I found this recipe while we were on our honeymoon in South Texas. Definitely not like Velveeta dip! I like it much better.

Ingredients

  • 1/2 cup finely chopped onion
  • 1 teaspoon butter
  • 1-1/3 cup tomato, chopped and seeded
  • 4 ounces green chiles, mild (chopped)
  • 1 cup american cheese, shredded
  • 1 cup monterey jack cheese, shredded
  • 1 teaspoon cornstarch
  • 1 teaspoon bottled hot pepper sauce, your choice. there are some that are deadly hot out there so be careful!
  • 1 package tortilla chips

How To Make mimi's chile con queso

  • Step 1
    In a saucepan cook onion in butter until tender. Stir in tomatoes and chiles. Simmer uncovered for 10 minutes.
  • Step 2
    Put cheese in a large bowl. Sprinkle with corn starch and toss with your fingers to get it covered equally.
  • Step 3
    Gradually add cheese mixture to saucepan, stirring until melted. Stir in hot pepper sauce and heat through. Serve with chips. Makes about 1-3/4 cups.
