I found this recipe while we were on our honeymoon in South Texas. Definitely not like Velveeta dip! I like it much better.

Ingredients For mimi's chile con queso

1/2 cfinely chopped onion

1 tspbutter
-
1-1/3 ctomato, chopped and seeded

4 ozgreen chiles, mild (chopped)

1 camerican cheese, shredded
-
1 cmonterey jack cheese, shredded

1 tspcornstarch
-
1 tspbottled hot pepper sauce, your choice. there are some that are deadly hot out there so be careful!

1 pkgtortilla chips
How To Make mimi's chile con queso

1In a saucepan cook onion in butter until tender. Stir in tomatoes and chiles. Simmer uncovered for 10 minutes.

2Put cheese in a large bowl. Sprinkle with corn starch and toss with your fingers to get it covered equally.

3Gradually add cheese mixture to saucepan, stirring until melted. Stir in hot pepper sauce and heat through. Serve with chips. Makes about 1-3/4 cups.
