I found this recipe while we were on our honeymoon in South Texas. Definitely not like Velveeta dip! I like it much better.

finely chopped onion
1 tsp
1-1/3 c
tomato, chopped and seeded
4 oz
green chiles, mild (chopped)
1 c
american cheese, shredded
1 c
monterey jack cheese, shredded
1 tsp
1 tsp
bottled hot pepper sauce, your choice. there are some that are deadly hot out there so be careful!
1 pkg
tortilla chips

How to Make Mimi's Chile Con Queso


  • 1In a saucepan cook onion in butter until tender. Stir in tomatoes and chiles. Simmer uncovered for 10 minutes.
  • 2Put cheese in a large bowl. Sprinkle with corn starch and toss with your fingers to get it covered equally.
  • 3Gradually add cheese mixture to saucepan, stirring until melted. Stir in hot pepper sauce and heat through. Serve with chips. Makes about 1-3/4 cups.
