I found this recipe while we were on our honeymoon in South Texas. Definitely not like Velveeta dip! I like it much better.

Ingredients
- 1/2 cup finely chopped onion
- 1 teaspoon butter
- 1-1/3 cup tomato, chopped and seeded
- 4 ounces green chiles, mild (chopped)
- 1 cup american cheese, shredded
- 1 cup monterey jack cheese, shredded
- 1 teaspoon cornstarch
- 1 teaspoon bottled hot pepper sauce, your choice. there are some that are deadly hot out there so be careful!
- 1 package tortilla chips
How To Make mimi's chile con queso

Step 1In a saucepan cook onion in butter until tender. Stir in tomatoes and chiles. Simmer uncovered for 10 minutes.

Step 2Put cheese in a large bowl. Sprinkle with corn starch and toss with your fingers to get it covered equally.

Step 3Gradually add cheese mixture to saucepan, stirring until melted. Stir in hot pepper sauce and heat through. Serve with chips. Makes about 1-3/4 cups.
