hot onion souffle

This recipe made the rounds in Memphis about fifteen years ago. I am not sure why it is called "Hot Onion Souffle," as it doesn't really taste like onion. It is very rich, easy to make, and people eat it like crazy! It is very forgiving, and just about any way one modifies it, it still turns out great. This is the original recipe, but it is easy to cut down for number of people to serve.

Ingredients

  • 3 (8 oz.) packages cream cheese
  • 1 lrg. - onion or small pkg. frozen onions
  • * 2 cups grated parmesan cheese
  • 1/2 cup mayonnaise

How To Make hot onion souffle

  • Step 1
    Pre-heat oven to 400. Lightly grease medium baking dish.
  • Step 2
    In dish, mix softened cream cheese,onion,parmesan and mayonnaise.
  • Step 3
    Bake in pre-heated oven til bubbly and browned, about 30 mins. I usually serve this with Fritos Dip Chips, but it would also be good with Melba Cracker Rounds.
  • Step 4
    (* Note: A friend who is a good cook modifies this by using yellow cheddar cheese in lieu of the cream cheese or sometimes mixing the two cheeses.)
