Our friends Dan and Alex turned us on to this.
Now it's one of our favorites. we use this as a side dish or dip with tortillas or corn chips. also makes a great meatless maindish on Fridays-I prep the cheese the night before and in the morning mix it all together-just pop it in the oven for an hour when we both get home.

Ingredients

2 large can(s)
white hominy, drained
1 16oz. pkg
sour cream
2 large can(s)
chopped green chilis
bread crumbs, seasoned
butter, cold
montery jack cheese and pepper jack cheese, shredded, no specific amount but a 50/50 ratio

How to Make Hominy/green chili cheese stuff

Step-by-Step

  • 1Mix hominy, green chilis,sour cream and aproximatly 3/4 of cheese mixture(reserve other 1/4 amount for top) stir until well blended together and stiff.
  • 2spread in butter casserol dish, sprinkle with remaining cheese, and breadcrumbs. Dot top with butter.
  • 3Bake in 350F oven for 45 minutes
  • 4then broil for 5-10 minutes until top is browned slightly and nice and bubbly on top.
