hamlin's white sauce. (the real deal)
This is the BEST Hamlin’s white sauce recipe. I did a side by side taste test with the original and I could not tell a difference. Dukes Mayo and Lighthouse blue cheese Dressing are key. I learned from a food distributor that sold to Hamlins that they used heavy mayo for their white sauce. Duke’s is a heavier mayo and far superior than Hellman’s or any other for this recipe. If I were to change anything it might be to lessen the amount of green olives...perhaps to a heaping ¼ cup. They are a strong flavor that magnifies as it sits. Thin with buttermilk if necessary. it must sit 24 hours.

- 1/2 cup chopped white onions
- 1/2 cup chopped spanish olives (the green ones stuffed with pimento)
- 1/2 teaspoon garlic powder
- 4 ounces lighthouse blue cheese dressing
- 1 pint duke's mayo

Step 1Combine all ingredients and refrigerate 24 hours. Thin with buttermilk.

Step 2Do NOT blend in blender.

Step 3Serve with tortilla chips and salsa, use as a salad dressing, top your nachos or any Mexican food dish with it. Would even be good as buffalo chicken wing dip.
