greek style spanakopita dip with pita chips

You can use those plain pita chips that you get at the store with this dip if you do not want to make them homemade.....but I suggest to make them homemade anyways!

Ingredients

  • 1 - 15oz carton whole milk ricotta cheese
  • 1 - 6oz carton plain low fat or fat free yogurt
  • 1/2 package of a 10oz pkg frozen chopped spinach,thawed and well drained
  • 1/3 cup crumbled garlic and herb feta cheese
  • 1 - 4 1/2oz can chopped pitted ripe olives
  • 1/4 cup sliced green onions
  • 1 clove garlic, minced (1 to 2 cloves)
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 - recipe pita chips

How To Make greek style spanakopita dip with pita chips

  • Step 1
    In a medium mixing bowl beat ricotta and yogurt with an electric mixer until smooth. Stir in drained spinach,feta cheese, olives, green onions, garlic, salt and pepper. Cover and refrigerate up to 24 hours. Serve with Pita Chips
  • Step 2
    *IDEA*: Try spooning the dip into assorted color peppers halves and serve pita chips around the peppers!
