My daughter Gabi (age 7) loves anything spicy and suggested i add rotel or my homemade salsa to this recipe.

  • 1/2 tsp
    lemon juice, fresh
  • 2 Tbsp
    chopped onions
  • 1/2 tsp
  • 2 Tbsp
    olive oil, extra virgin
  • 1/2
    can of rotel *optional

How to Make Gabi's Gaucomole


  1. Remove pits, scoop pulp into a bowl and mash. stir in the rest. * you can also put all the ingredients into a food processor if you like it smooth* refrigerate for 1 hour before serving
