french onion dip
A take on an old classic. Bet you will not pick up the pale-o-dip at the grocery store again after having this one.

Makes about 2 cups
Ingredients
- 16 ounces sour cream
- 1 1/2 cups yellow onion, thinly sliced
- 2 cups beef stock (see recipe in "the basics")
- - kosher salt and freshly ground pepper
- - vegetable oil
How To Make french onion dip

Step 1Add about 1 tablespoon vegetable oil to skillet and heat over medium heat.

Step 2Add onions and season with salt and pepper. Cook slowly until caramelized and brown.

Step 3Add beef stock and reduce to 1 tablespoon. Remove from heat and let cool to room temp.

Step 4Combine onion mixture with sour cream and stir to mix well.
