french onion dip

A take on an old classic. Bet you will not pick up the pale-o-dip at the grocery store again after having this one.

yield Makes about 2 cups

Ingredients

  • 16 ounces sour cream
  • 1 1/2 cups yellow onion, thinly sliced
  • 2 cups beef stock (see recipe in "the basics")
  • - kosher salt and freshly ground pepper
  • - vegetable oil

How To Make french onion dip

  • Step 1
    Add about 1 tablespoon vegetable oil to skillet and heat over medium heat.
  • Step 2
    Add onions and season with salt and pepper. Cook slowly until caramelized and brown.
  • Step 3
    Add beef stock and reduce to 1 tablespoon. Remove from heat and let cool to room temp.
  • Step 4
    Combine onion mixture with sour cream and stir to mix well.
