red onion
1 medium
red pepper
2 clove
1/2 tsp
cheyenne pepper
2 Tbsp
lemon juice
2 Tbsp
tahini paste
3 Tbsp
fresh parsley
1 1/2 tsp
1/2 tsp

How to Make For the Love of "Eggplant"!


  • 1Peel 2 Eggplants. Cut into 1" Chunks, Red Onion cut into 1" chunks, Red Pepper, cut into 1" chunks, 2 cloves of Garlic..Minced
  • 2After all Vegs are chunked place in a cooking sheet (cookie sheet is fine) Pour 3 Tbls. of Olive Oil over the Vegs, salt, pepper, cheyenne pepper and Toss
  • 3Put in the Oven to Roast at 400 degrees for 45 minutes or until all vegs are soft (depending on your Oven)
  • 4Allow the Vegs to cool then place them in a Food Processor and Puree. After the Vegs are pureed, add Lemon Juice, Tahini Paste, Fresh Parsley and Pulse until mixed..Serve with Pita Bread (either toasted or torn) and Enjoy!
