1Peel 2 Eggplants. Cut into 1" Chunks, Red Onion cut into 1" chunks, Red Pepper, cut into 1" chunks, 2 cloves of Garlic..Minced
2After all Vegs are chunked place in a cooking sheet (cookie sheet is fine) Pour 3 Tbls. of Olive Oil over the Vegs, salt, pepper, cheyenne pepper and Toss
3Put in the Oven to Roast at 400 degrees for 45 minutes or until all vegs are soft (depending on your Oven)
4Allow the Vegs to cool then place them in a Food Processor and Puree. After the Vegs are pureed, add Lemon Juice, Tahini Paste, Fresh Parsley and Pulse until mixed..Serve with Pita Bread (either toasted or torn) and Enjoy!
