Ingredients
- 2 large eggplants
- 1 medium red onion
- 1 medium red pepper
- 2 cloves garlic
- 1/2 teaspoon cheyenne pepper
- 2 tablespoons lemon juice
- 2 tablespoons tahini paste
- 3 tablespoons fresh parsley
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
How To Make for the love of "eggplant"!

Step 1Peel 2 Eggplants. Cut into 1" Chunks, Red Onion cut into 1" chunks, Red Pepper, cut into 1" chunks, 2 cloves of Garlic..Minced

Step 2After all Vegs are chunked place in a cooking sheet (cookie sheet is fine) Pour 3 Tbls. of Olive Oil over the Vegs, salt, pepper, cheyenne pepper and Toss

Step 3Put in the Oven to Roast at 400 degrees for 45 minutes or until all vegs are soft (depending on your Oven)

Step 4Allow the Vegs to cool then place them in a Food Processor and Puree. After the Vegs are pureed, add Lemon Juice, Tahini Paste, Fresh Parsley and Pulse until mixed..Serve with Pita Bread (either toasted or torn) and Enjoy!
