If you really love Eggplant..you will love this recipe!!

Ingredients

  • 2 large eggplants
  • 1 medium red onion
  • 1 medium red pepper
  • 2 cloves garlic
  • 1/2 teaspoon cheyenne pepper
  • 2 tablespoons lemon juice
  • 2 tablespoons tahini paste
  • 3 tablespoons fresh parsley
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper

How To Make for the love of "eggplant"!

  • Step 1
    Peel 2 Eggplants. Cut into 1" Chunks, Red Onion cut into 1" chunks, Red Pepper, cut into 1" chunks, 2 cloves of Garlic..Minced
  • Step 2
    After all Vegs are chunked place in a cooking sheet (cookie sheet is fine) Pour 3 Tbls. of Olive Oil over the Vegs, salt, pepper, cheyenne pepper and Toss
  • Step 3
    Put in the Oven to Roast at 400 degrees for 45 minutes or until all vegs are soft (depending on your Oven)
  • Step 4
    Allow the Vegs to cool then place them in a Food Processor and Puree. After the Vegs are pureed, add Lemon Juice, Tahini Paste, Fresh Parsley and Pulse until mixed..Serve with Pita Bread (either toasted or torn) and Enjoy!
