Drunken Cheddar Spread

Monica H

Make sure the cheese is softened to room temp before you work with it. The texture of this cheese spread is fluffy, and the taste is very savory.
The minced red bell pepper is optional because bell pepper puts so much flavor in a dip, that it is easy for it to overtake all the other flavors very quickly. So, I use a very tiny amount, just for color and a little flavor.
