Make sure the cheese is softened to room temp before you work with it. The texture of this cheese spread is fluffy, and the taste is very savory. The minced red bell pepper is optional because bell pepper puts so much flavor in a dip, that it is easy for it to overtake all the other flavors very quickly. So, I use a very tiny amount, just for color and a little flavor.

Ingredients

  • 8 ounces softened cream cheese
  • 2 1/2 cups extra sharp cheddar cheese
  • 1/4 cup heavy whipping cream
  • 1 1/2 teaspoons dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon curry powder
  • 1/4 teaspoon black pepper
  • 1 teaspoon finely minced red bell pepper (optional)
  • 1/4 cup heavier, darker and / or any full-bodied beer
  • - minced scallions for garnish (optional)

How To Make drunken cheddar spread

  • Step 1
    Use a food processor or hand mixer and mix all ingredients (except optional scallion garnish) together thoroughly.
  • Step 2
    Store in fridge, covered, for at least 2 hours before serving. Overnight would be best.
