dip essentials: holliday cheese spread
This is an easy/peasy dip to assemble, and uses ingredients that you probably have lurking about in your kitchen cabinets. I based this loosely on a French Gournay cheese, but with less work. It is great with crackers, or toasted bread; in addition, I have used it on omelets, and mash taters… So yummy. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 8 ounces cream cheese, room temperature
- 2 tablespoons sour cream
- 2 tablespoons sweet butter, unsalted, room temperature
- 2 cloves baked garlic, or more, if you like garlic
- 1/4 teaspoon sea salt, or kosher salt
- 3 - 4 medium capers
- 1/2 teaspoon tamari sauce, or liquid aminos
- 1 pinch white pepper, freshly ground
- 1/4 cup fresh italian parsley, chopped
- OPTIONAL ITEMS
- - cayenne pepper, just a pinch, for some added heat on those cold winter days
- - cooked, chopped bacon… mmmm
- - a bit of juice from the caper bottle, for tang
- - a teaspoon or so, of finely grated lemon zest, for a citrus note

Step 1PREP/PREPARE

Step 2If you want to change up the flavors, leave out the baked garlic, and add about a scant tablespoon of dehydrated onions.

Step 3If you do not want to bake the garlic, then use 1 smashed clove of regular garlic.

Step 4You will need a mini-prep blender, or any blender, for that matter.

Step 5A note on the tamari sauce… it was a last-minute addition, but I felt it really brought the dish to life. Suggestion, make the recipe without the tamari, and give it a taste, if you like it, fine; however, it you are feeling adventurous, add the tamari and then give it another taste. I think you will like how it livens up this dip.

Step 6Gather your Ingredients (mise en place).

Step 7Add all the ingredients (except the parsley) to a small blender.

Step 8Blend until completely smooth.

Step 9Add the parsley, and give a few 1-second pulses, until incorporated into the dip.

Step 11Serve at room temperature in a small bowl, and serve with crackers, bread (toasted or plain), or sturdy chips. Enjoy.
