I found this recipe many years ago at The Spoon River Drive Fall Festival in Illinois. It was from an Elementary School Cook Book. I have lived in many states and have passed this recipe along to hundreds of people and have only found 2 people that didn't love it. One was allergic to Tomatoes and the other hated bacon. One friend changed the name to 88 eleven to help her remember the ingredients...LOL
1Fry bacon till crisp. Set aside to cool, then crumble in large bowl. Dice tomato saving any juice and add to bowl. Add in Mayo and Sour Cream and mix well. Add just a bit of cooled bacon grease for extra flavor (optional). Serve with toast wedges. Tastes exactly like a BLT. This is a single batch and serves approx. 4 people. Refrigerate leftovers.
