I was given this recipe a few years ago from a long time friend. I have made it more times than I can count, and it always receives rave reviews. Even the most die hard spinach hater, love this dip.

Ingredients
- 2 - 8 oz blocks cream cheese
- 1 can mexican rotel
- 1 - small box spinach (thawed)
- 1 cup shredded cheddar cheese
- - emeril essence to taste
How To Make creamy spinach dip

Step 1Melt cream cheese in microwave, add all other ingredients(make sure all excess liquid is squeezed out of spinach) in oven safe dish. Place in a 350 degree oven, and bake for 30 minutes, or until slightly browned on top.

Step 2You can also place all ingredients in a crock pot and cook on low for 1 1/2 to 2 hours, stirring occasionally. Serve with your favorite chips, Enjoy! *I have also used other shredded cheeses, whatever I have on hand.
