I was given this recipe a few years ago from a long time friend. I have made it more times than I can count, and it always receives rave reviews. Even the most die hard spinach hater, love this dip.

Ingredients

2 - 8 oz blocks cream cheese
1 can mexican rotel
1 - small box spinach (thawed)
1 cup shredded cheddar cheese
- emeril essence to taste

How To Make creamy spinach dip

Step 1

Melt cream cheese in microwave, add all other ingredients(make sure all excess liquid is squeezed out of spinach) in oven safe dish. Place in a 350 degree oven, and bake for 30 minutes, or until slightly browned on top.

Step 2

You can also place all ingredients in a crock pot and cook on low for 1 1/2 to 2 hours, stirring occasionally. Serve with your favorite chips, Enjoy! *I have also used other shredded cheeses, whatever I have on hand.
