creamy guacamole

I love guacamole and sometimes I use seasoning packets to make a quick guacamole, but nothing beats the fresh taste of homemade guacamole with your seasonings. I like to add tomatoes sometimes to mine. If you don't want to much heat you don't have to use the whole jalapeno and try to avoid using the seeds and membrane since that's where most of the heat comes from. This guacamole has an extra touch of creaminess from the cream cheese that I add.

Ingredients

  • 3 - ripe avocados, halved, seeded and peeled
  • 4 ounces cream cheese
  • 1 - jalapeno chile, seeded and minced
  • 3 tablespoons finely chopped cilantro leaves
  • 1/4 cup minced red onion (about 1/4 of an onion)
  • 2 tablespoons fresh lime juice, divided
  • 1/2 teaspoon coarse salt (or to taste)
  • - freshly ground black pepper to taste

How To Make creamy guacamole

  • Step 1
    In a food processor combine avocados, cream cheese and lime juice. Pulse until chunky.
  • Step 2
    Add chile, cilantro, diced tomatoes and onion and mix well. Add salt, pepper, and remaining lime juice to taste.
