Cream Cheese Cucumber Spread/Dip

I got this recipe from a good friend of mine. She loves to cook and so do I. This is one of those recipes where you can make it your own. You need to add at least 1 tablespoon of onion, but I usually add more. You can use Ms. Dash Original seasoning if you like, and you don't have to add 3/4 cup mayonnaise you can use less. I love the smell of fresh cucumber as you are grating this up ,and this is a wonderful spread/dip for salmon or crab cakes.

large cucumber grated
1 Tbsp
onion, grated (or more if you love onion like me)
8 oz
package cream cheese-softened
1/2 c
to 3/4 cup mayonnaise
salt and pepper to taste

How to Make Cream Cheese Cucumber Spread/Dip


  • 1Grate cucumber and onion on several thicknesses of paper towels, and squeeze out all the water.
  • 2Place in a bowl and blend with other ingredients; adding enough mayonnaise to make it of a spreading consistency.
  • 3Salt and pepper to taste. I love using Mrs. Dash Original Seasoning or some celery salt would be great to perk it up. Chill in the refrigerator. Tastes even better by the next day. This is one of those recipes you can make it your own.
