fresh cucumber dip

I got this recipe from a good friend of mine. She loves to cook and so do I. This is one of those recipes where you can make it your own. I love the smell of fresh cucumber as you are grating this up ,and this is a wonderful spread/dip for salmon or crab cakes.

Ingredients

  • 2 - small cucumbers de--seeded and slightly processed
  • 1/4 cup red onion finely chopped
  • 8 ounces package cream cheese-softened
  • 1/4 cup mayonnaise like hellmann's
  • 1 tablespoon lemon juice
  • 2 teaspoons dried parsely
  • 2 teaspoons dried dill
  • salt and pepper to taste

How To Make fresh cucumber dip

  • Need a quick, fresh delicious dip how about a cucumber dip. Use your fresh cucumbers from the garden, cream cheese, mayo, and onion. Wow so easy and so good.
    Step 1
    Place de-seeded cucumbers in processor and process slightly. You don't want to puree, just get it chopped nicely. If you want to, chop it by hand. Finely chop the red onion or you could use your processor.
  • Using your processor is an easy way to get your fresh cucumbers chopped up. However don't chop too fine. We don't want it pureed.
    Step 2
    Place in a bowl and blend with other ingredients To get a smooth consistency use a hand mixer.
  • Step 3
    Salt and pepper to taste. Chill in the refrigerator for several hours. Chill overnight is even better. It gives a chance for all the flavors to come together.
