Ingredients
- 3 cups frozen corn thawed
- 2 tablespoons olive oil
- 2 small jalapeno seeded and diced
- 3 cloves garlic minced
- 2 small shallots minced
- 2 cups shredded monterey jack cheese
- - cilantro for garnish
How To Make corn queso

Step 1Place half the corn in a food processor and add 1/2 cup of water. Puree until smooth or as smooth as you can get it. Strain through a fine mesh strainer discarding the solids. Set aside

Step 2Add the oil to a large skillet. Saute the garlic, jalapenos, shallots and remaining corn for about 5 minutes. Add the strained puree. Stir in the cheese and cook until melted and bubbly. Garnish with cilantro

Step 3Serve with tortilla chips
