Ingredients

  • 3 cups frozen corn thawed
  • 2 tablespoons olive oil
  • 2 small jalapeno seeded and diced
  • 3 cloves garlic minced
  • 2 small shallots minced
  • 2 cups shredded monterey jack cheese
  • - cilantro for garnish

How To Make corn queso

  • Step 1
    Place half the corn in a food processor and add 1/2 cup of water. Puree until smooth or as smooth as you can get it. Strain through a fine mesh strainer discarding the solids. Set aside
  • Step 2
    Add the oil to a large skillet. Saute the garlic, jalapenos, shallots and remaining corn for about 5 minutes. Add the strained puree. Stir in the cheese and cook until melted and bubbly. Garnish with cilantro
  • Step 3
    Serve with tortilla chips
