Ingredients
- 2 cans mexicorn, 11 oz (steam crisp green giant)
- 1 can rotel tomatoes
- 2 cups mexican blend shredded cheese
- 4-6 - green onions, sliced
- 1 cup mayonnaise
- 1 cup sour cream

Step 1Mix all ingredients together.

Step 2Chill before serving. Even better the next day

Step 3Serve with Frito scoops or your favorite corn chip.

Step 4NOTES: The southwestern steam crisp corn or chipotle white corn or any combination of the steam crisp flavors may be used. The same for the Rotel tomatoes, if you want more heat use the hotter flavored ones. Cheese is the same. You can use regular cheddar shredded cheese or the co-jack. I would use the finely shredded, but you can use the regular shredded size also.
