connie’s cheese spread

I got this recipe in the late 70’s from my sister-in-law when she brought it to our Christmas gathering. I couldn’t find the dip mix for a long time then I misplaced the recipe. I had added it to a cookbook I made for my daughter when her husband at the time joined the Army and they moved away. I lost all my recipes when our house burned. I found the dip mix at Kroger and finally remembered I had added the recipe to her book. I’m finally able to make it again.

Ingredients For connie’s cheese spread

  • 1 lb
    sharp cheddar cheese, grated
  • 1/4 stick
    butter, softened
  • 1/2 c
    mayonnaise
  • 4 oz
    green chilies, chopped and drained
  • 1 Tbsp
    water
  • 2 pkg
    dry green onion dip mix 0.56 grams each
  • 2 oz
    jarred, chopped pimento, drained

How To Make connie’s cheese spread

    Line 1 quart bowl with plastic wrap.

    Mix water and dip mix and let sit for 5 minutes.
  • 3
    Let cheese and butter soften at room temperature Mix together well and add mayonnaise. Add chilies and pimento and dip mix.

    Spoon mixture into prepared bowl. Chill. Unmold and serve with crackers such as Ritz or Chicken biscuit crackers.
