connie’s cheese spread
I got this recipe in the late 70’s from my sister-in-law when she brought it to our Christmas gathering. I couldn’t find the dip mix for a long time then I misplaced the recipe. I had added it to a cookbook I made for my daughter when her husband at the time joined the Army and they moved away. I lost all my recipes when our house burned. I found the dip mix at Kroger and finally remembered I had added the recipe to her book. I’m finally able to make it again.

Ingredients
- 1 pound sharp cheddar cheese, grated
- 1/4 stick butter, softened
- 1/2 cup mayonnaise
- 4 ounces green chilies, chopped and drained
- 1 tablespoon water
- 2 packages dry green onion dip mix 0.56 grams each
- 2 ounces jarred, chopped pimento, drained
How To Make connie’s cheese spread

Step 1Line 1 quart bowl with plastic wrap.

Step 2Mix water and dip mix and let sit for 5 minutes.

Step 3Let cheese and butter soften at room temperature Mix together well and add mayonnaise. Add chilies and pimento and dip mix.

Step 4Spoon mixture into prepared bowl. Chill. Unmold and serve with crackers such as Ritz or Chicken biscuit crackers.
