cilantro pesto won ton bites w/spicy peanut dipping sauce

I have been on a bit of a cilantro kick lately to the chagrin of my close friend and taste tester V. who really doesn't care for cilantro, this is another yummy appetizer I wanted to share.

Ingredients

  • 1/2 pound hot italian sausage (casing removed)
  • 4 cloves garlic
  • 3/4 cup cilantro leaves
  • 1/2 cup parmesan cheese (fresh no the canned kind)
  • 1/3 cup walnuts
  • 1/4 teaspoon ground cumin
  • 1 package won ton skins (about 40)
  • SPICY PEANUT SAUCE
  • 1 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1 teaspoon crushed garlic
  • 2 tablespoons honey
  • 1 teaspoon cayenne pepper
  • 1/4 cup lemon juice

How To Make cilantro pesto won ton bites w/spicy peanut dipping sauce

  • Step 1
    (Won Ton Bites) Combine all ingredients (except won ton skins) in a food processor, pulse until well combined and chopped.
  • Step 2
    place 1 spoonful in the center of a won ton skin
  • Step 3
    moisten 2 of the edges of the won ton skin with a little water, fold over into a triangle shape crimping the edges
  • Step 4
    Repeat with remaining filling and skins
  • Step 5
    Fry in small batches in oil over med-high heat until golden brown (it takes about 1 minute) Drain on paper towels and serve with spicy peanut sauce or any sauce of your choice I LOVE Mae Ploy sauce (its sweet, garlicy and slightly spicy)

    (Spicy Peanut Sauce Instructions) Whisk all ingredients together until well blended, le sit while you are preparing the Won Tons so the flavors meld well.
