Beer cheese is very popular at all the sports bars in my city. This is the version I make when we have sports fans over. Everyone LOVES it!

Ingredients

  • 1/3 pound chirizo
  • 1 pound velvetta, cut into cubes
  • 1/2 cup light beer
  • 1 can rotel

How To Make chirizo beer cheese

  • Step 1
    Cook chorizo in skillet on medium-high heat until done.
  • Step 2
    Meanwhile, microwave velveeta and beer in large microwaveable bowl on HIGH until cheese is completely melted, stirring after 3 min.
  • Step 3
    Drain chirizo and canned rotel. Stir into cheese and beer mixture.
