1/2 stick
butter or margarine
1/2 c
chopped onion
1/2 clove
garlic, finely minced
12 oz
sharp cheddar cheese, shredded
2 can(s)
black-eyed peas, drained and rinsed (15 oz. cans)
jalapeno pepper, finely chopped
1 can(s)
chopped green chilies (4 oz. can)
cumin, salt and pepper to taste

How to Make Cheesy Black-Eyed Pea Dip


  • 1In a medium saucepan over medium-low heat, melt butter and then add onions. Saute until golden then add garlic, jalapeno and chilies and cook for 1 minute.
  • 2Lower heat and add cheddar cheese, stir until melted. Add the black-eyed peas and cook for 5 minutes, stirring constantly. Season to taste with salt, pepper, cumin and chipotle powder if you'd like a bit more heat. Serve warm with tortilla chips.
