Ingredients
- 1/2 stick butter or margarine
- 1/2 cup chopped onion
- 1/2 clove garlic, finely minced
- 12 ounces sharp cheddar cheese, shredded
- 2 cans black-eyed peas, drained and rinsed (15 oz. cans)
- 1 - jalapeno pepper, finely chopped
- 1 can chopped green chilies (4 oz. can)
- - cumin, salt and pepper to taste
How To Make cheesy black-eyed pea dip

Step 1In a medium saucepan over medium-low heat, melt butter and then add onions. Saute until golden then add garlic, jalapeno and chilies and cook for 1 minute.

Step 2Lower heat and add cheddar cheese, stir until melted. Add the black-eyed peas and cook for 5 minutes, stirring constantly. Season to taste with salt, pepper, cumin and chipotle powder if you'd like a bit more heat. Serve warm with tortilla chips.
