Ingredients
- 2 medium yellow cooking onions
- 2 cups old cheddar cheese
- 2 teaspoons vegetable or canola oil
- 2 tablespoons all purpose flour
- 1/4 teaspoon cayenne pepper
- 1 1/2 cups lager ale
- 1 tablespoon dijon mustard
- 4 slices side bacon cooked crisp and crumbled
- 4 tablespoons pure maple syrup
- 4 - green onions finely sliced
- 1/2 cup yellow cheese curds or cheese of your preferance and chopped
How To Make cheese dip with caramelized onions.

Step 1Peel onions and cut into 1/4 inch slices. heat oil in heavy or iron skillet on medium heat, add onions, stir, cover cook for about 15 minutes stirring occasionally, onions should be browned and softened.

Step 2In large bowl combine cheddar, flour and cayenne, add ale and mustard to onion mixture, stir cheese mixture to skillet and stir to combine,,add rest of cheese and curds and cook and stir until cheese has melted..remove from heat.

Step 3Recipe can be made to this point and then placed on top shelf of heated barby, stirring occasionally for 8 to 10 minutes until cheese has melted. To serve sprinkle top of cheese mixture in skillet with bacon, green onions and maple syrup. Have crusty bread, blanched broccoli, sweet green peppers and any other vegie you have on hand. leftovers can be reheated and recipe can also be cut in half.
