black bean and corn dip

This is great for a Super Bowl party but can also be served at a family gathering because the dip will last in refrigerator for 3 days.

Ingredients

  • 2 cups frozen corn, thawed
  • 1 cup black beans, rinsed well
  • 1 bunch green onions, chopped (bottoms and tops)
  • 1 cup cilantro, chopped
  • 1 - avocado, medium to large, chopped
  • 1 - juice from one lime
  • 1 cup 1 cup of jar salsa (add a little more to suit your taste)

How To Make black bean and corn dip

  • Step 1
    Mix all ingredients together. Cover and store in refrigerator for at least 1 hour before serving.
  • Step 2
    The amount or sausa or degree of heat is strictly up to each cook. I normally use Pace Medium.
  • Step 3
    Serve with Tostito or Frito Scoops. I usually make a tray with dip on the scoops and then put the remainder in a bowl with more chips on the side. The stuffed chips will get soggy after an hour.
