best ever: spinach dip

Ingredients

  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 tablespoon olive oil
  • 27 ounces spinach or mixed greens (i used mixed greens)
  • 3 - hot chili peppers, from jar, tops cut off and minced
  • 1 package cream cheese (8 oz.), soft
  • 1 cup milk or half and half
  • 12 ounces grated monterey jack cheese
  • 1 tablespoon red wine vinegar
  • - salt and pepper to taste
  • 2 tablespoons sour cream (opt)

How To Make best ever: spinach dip

  • Step 1
    Saute onion, garlic, and peppers over medium heat until soft (I even let mine brown a little). Transfer to large bowl (I used my Kitchen Aid mixer) and mix in, spinach, cheese, cream cheese, milk, and vinegar. Season with salt and pepper. Spoon mixture into shallow baking dish (I used a 9 inch round cake pan)and bake at 400 degrees F. Bake until dip is bubbly and top is light brown, about 35 minutes. Top with 2 TBS sour cream and serve warm with tortilla chips.
