chocolate raspberry sauce

This is one instance in which frozen berries are better than fresh. From the California Culinary Academy.

Ingredients

  • 10 ounces raspberries frozen in syrup
  • 1/4 cup sugar
  • 5 ounces semisweet chocolate, in 1/2-inch pieces
  • 2 tablespoons unsalted butter, softened

How To Make chocolate raspberry sauce

  • Step 1
    Thaw raspberries in their syrup.
  • Step 2
    Mash berries to a mush-like consistency.
  • Step 3
    In a heavy small saucepan, bring sugar and berries to a boil.
  • Step 4
    Add chocolate and butter and cook, stirring constantly, until melted.
  • Step 5
    Serve hot, or cool to room temperature and refrigerate.
  • Step 6
    Sauce will keep for several weeks. To use, reheat over hot water.
  • Step 7
    Makes about 1-1/4 cups.
