How to Make Satisfying Hickory Nut Cake Recipe

  • 1Grease and lightly flour two 8 x 1 1/2 inch round baking pans. In a large mixing bowl stir together flour, the 1 cup of ground nuts, baking powder, and salt. Set pans and flour mixture aside. In another large mixing bowl beat butter (or margarine) with an electric mixer on medium to high speed about 30 seconds or until softened. Add sugar and vanilla; beat until combined. Add eggs, one at a time, beating on medium speed until combined. Alternately add flour and light cream (or milk), beating on low to medium speed after each addition, just until combined. Spread batter into the prepared pans. Bake in a 375F oven for 35 to 40 minutes or until cake test done. Cool cakes in pan on wire racks for 10 minutes. Remove cakes from pans and completely cool on the racks. To assemble, place one cake layer on a serving plate. Spread with half of the frosting, then sprinkle with half of the finely copped nuts. Top with second layer. Spread top with the remaining frosting and sprinkle with the remaining chopped nuts. Store in the refrigerator Cream Cheese Frosting: Recipe located in this program
