2 large Russet or baking potatoes
1/4 cup heavy cream, vegetable stock or water
1/2 cup fresh or frozen peas
2 tablespoons olive oil
1 teaspoon black mustard seeds
1 teaspoons cumin seeds
1 small onion, finely chopped
1 small carrot, cut into small cubes
1 small clove garlic, finely minced
1 to 2 fresh green chilies or jalapeños, seeded and minced
1-inch piece fresh ginger, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
2/3 teaspoons chat masala (see note)
1/2 teaspoon turmeric
1/2 teaspoon cayenne
pinch of asafetida
2/3 teaspoon sea salt
olive oil for brushing
