"The secret to a great caramel popcorn is to boil the caramel until it is a dark golden brown colour, that way the caramel will set crisp, not chewy, which gets stuck in your teeth and is really annoying! This recipe provides directions for popping popcorn in a stovetop, but you can always use a popcorn maker (convenient and healthier as no oil is required). WARNING: This is seriously addictive and it makes a lot! It is hard to make a smaller batch of caramel so I had to match the quantity of popcorn to it. ½ a cup of popping corn makes about 10 cups of popcorn, and ¾ cup makes about 15...."

INGREDIENTS
For the popcorn
¼ cup vegetable oil (not required if air popping with a popcorn maker)
½ cup popping corn (or ¾ cup if you want a more lightly coated popcorn)
For the caramel
1 stick / 125g butter, chopped
¾ cup white sugar
2 tablespoons honey (or maple syrup)
1 teaspoon salt - for caramel
1 teaspoon sea salt flakes extra
