INGREDIENTS
½ pound linguini
¾ pound salmon, cut into chunks
4 Tbsp olive oil
½ cup chopped onion
3-4 garlic cloves, chopped
½ cup green pepper, chopped
½ cup red pepper, chopped (can use orange or yellow)
½ cup black beans, drained and rinsed
½ cup red or white kidney beans, drained and rinsed
⅓ cup mushrooms, sliced (optional)
1 can diced tomatoes, drained
1 tsp dried rosemary
1 tsp dried oregano
1 tsp dried basil
Pepper to taste
⅓ cup white cooking wine
⅓ cup Parmesan cheese for garnish
