"It is called ham because the fish is cured. Fresh salmon is marinated in a honey, soy sauce, and garlic mixture to cure. There is no ham in this dish, and no cooking involved. Plan ahead to marinate 36 to 48 hours in the refrigerator...."

INGREDIENTS
1 side salmon about 2 to 2-1/2 pounds, skin and bones removed
2 cups soy sauce
3/4 cup honey
6 Tablespoons water
3 cloves garlic, minced
2 teaspoons freshly ground pepper
