Ingredients
- 15 ounces can white beans
- 5-7 ounces can tuna packed in water
- 1/4 cup sweet onion, finely chopped
- 2 tablespoons red or yellow pepper, finely chopped
- 10-12 - kalamata olives, cut up
- 3 medium tomatoes, cut into wedges
- 2 tablespoons prepared greek salad dressing
- - salt, pepper, balsamic vinegar
- 1/4 cup feta cheese crumbles
- - lettuce for garnish
How To Make tuna and white bean salad

Step 1In a bowl, mix together rinsed beans, drained tuna, onion, peppers, olives. Stir in salad dressing. (If not using prepared dressing, check out a recipe for Greek salad dressing).

Step 2Cut each tomato into 8 wedges, keep attached at the bottom. Sprinkle with salt, pepper and balsamic vinegar on cut edges of tomatoes. Scoop equal portions of tuna salad on each tomato. Top with feta cheese. Season with salt and pepper to taste. Tuck some lettuce around each tomato, if desired.
