Passed on by my Aunt Carol through our family reunion cookbook. The perfect sweet relish for adding to tuna fish sandwiches, tuna macaroni salad, burgers, and hot dogs.

Ingredients
- 8 - large cucumbers, peeled and sliced
- 1/4 cup salt
- 4 medium onions, peeled
- 4 medium green bell peppers, seeded
- 4 1/2 teaspoons celery seed
- 4 1/2 teaspoons mustard seed
- 2 1/2 cups granulated sugar
- 1 1/2 cups apple cider vinegar

Step 1Place cucumbers in a large glass bowl. Stir in salt. Chill overnight.

Step 2Drain and put through a coarse grinder or food processor.

Step 4Place the vegetables in a saucepan with the seasonings, sugar, and apple cider vinegar. Bring to a boil. Cook for 30 minutes; stirring often. Put in sterilized jars and process for 10 minutes.
