I love this salad! It's almost like a nicoise salad,I use leftover green beans. I also like to make this salad with salmon.

Ingredients

  • VINAIGRETTE
  • - 3/4 c vegetable oil
  • - 1/4 c red wine vinegar
  • - 2 t. chopped green onion
  • - 2 t. chopped fresh parsley
  • - 1/2 t dill weed
  • - 1 clove garlic,minced
  • - 1/4 t. basil leaves
  • - 1/4 t. oregano leaves
  • - 1/2 t. salt
  • - 1/4 t. black pepper
  • SALAD
  • - 4 medium potatoes,cooked,sliced thin
  • - 2 c green beans,fresh cooked or canned and drained
  • - chopped lettuce
  • - 2 (6 1/2 oz) cans tuna,drained
  • - 3 eggs,hard boiled,quartered
  • - 2 tomatoes,cut into wedges
  • - 1/2 c sliced ripe olives

How To Make marinated tuna vegetable platter

  • Step 1
    In jar with tight fitting lid,combine all vinaigrette ingredients;shake well. In small bowl combine potatoes and 1/4 c dressing,chill 1 hour. In another bowl,combine green beans and 1/4 c dressing,chill 1 hr. To serve,line a serving platter with lettuce. Spoon potatoes onto center of platter. Spoon tuna over potatoes. Arrange green beans around potatoes. Alternate eggs and tomatoes around edge of platter. Sprinkle with olives. Pour dressing over salad.
