Ingredients
- 1 english cucumber diced
- 1 cup cherry tomatoes halved
- 1/2 small sweet yellow onion diced
- 1 bunch fresh parsley chopped
- 1/2 teaspoon thyme, dried
- 2 teaspoons dill, dried
- 1 teaspoon garlic pepper
- 3 large Albacore Tuna packets drained
- 1 small lemon juiced
- 2 tablespoons white wine vinegar
- 1/4 cup olive oil, extra virgin
- 2 tablespoons mayonnaise (optional)
- salt & pepper to taste

Step 1Chop the cucumbers, onions, parsley and tomatoes and set them aside.

Step 2In a large bowl add your drained tuna and break it up with a fork.

Step 3Add your chopped vegetables to the tuna and give it a good mix.

Step 4Add your liquid ingredients to the bowl and mix well. Taste your salad for any adjustments.

Step 5Pecans or walnuts would be good in this tuna salad adding texture and crunch. This would be good on a bed of romaine lettuce.
