Ingredients
- TUNA SALAD
- 4 ounces fresh bean sprouts
- 1 mini cucumber cut into chunks
- 1/2 cup cilantro chopped
- 2 tablespoons fresh basil leaves
- 1 teaspoon sesame oil
- 1 tuna steak cut into chunks
- 1 tablespoon peanut oil
- 1 tablespoon roasted cashews crushed
- DRESSING
- 1 teaspoon peanut oil
- 1 teaspoon grated ginger
- pinch of red chili flakes
- 4 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon tamarind paste
- 1/2 cup brown sugar
How To Make caramelized tuna salad

Step 1To make the dressing. In a small saucepan add the peanut oil. Add the ginger and red pepper flakes and cook a few seconds. Add the soy sauce, Fish sauce and tamarind paste. Cook 30 seconds. Add the brown sugar and cook until the sugar has dissolved and the dressing is syrupy. Remove from heat and set aside.

Step 2Mix the bean sprouts, cilantro, cucumber, and basil leaves together. Place on plate.

Step 3Cut the tuna into chunks. Heat the peanut and sesame oil in a cast iron pan. Once hot add the tuna chunks and stir fry until desired doneness. Top the salad with the tuna. Drizzle the dressing over the top and garnish with nuts
