chicken o the sea mac salad / cassies

This salad is delicious and one of my most requested...this is my very own recipe...am sure there are versions out there like it...but I've made this salad for years...I finally took the time to measure everything out to post the recipe...I usually add about 1/2 cup shredded cheddar cheese as well...I didn't today...it's also great with crab... I always have to make a small bowl of this for my Dad when I'm making regular mac salad...as this is his fave...I hope you enjoy it as much as we do...

Ingredients

  • 2 - 2 1/2 cups macaroni , cooked according to package instructions - drain and rinse/ any combination of pasta - i like to mix them up
  • 5 - hard boiled eggs, i chop 4 and leave 1 for decoration
  • 1 stalk - celery, sliced thin or chopped
  • 1/2 cup fine shredded cheddar cheese - optional - i don't always use
  • 1/4 cup green bell pepper, diced
  • 1/4 cup sweet red pepper, diced
  • 1/2 cup bread and butter sweet pickles, chopped
  • 1 - sweet onion, diced
  • 1 cup frozen green peas, thawed
  • 6 large black olives, quartered
  • 3 - 4 ounces cans white albacore tuna - drained
  • DRESSING
  • 1 cup helmanns mayonnaise - i dont substitute
  • 1/2 cup sour cream
  • 1/4 cup sugar or if like sweeter use 1/2 cup
  • 1 teaspoon dry mustard
  • 1 teaspoon yellow mustard
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried dill
  • about - 3 tablespoons, sweet relish
  • 1 teaspoon pepper
  • 1 teaspoon kosher salt
  • - paprika for garnish

How To Make chicken o the sea mac salad / cassies

  • Step 1
    Prepare pasta - drain and rinse. In a large bowl, add the pasta, veggies, egg, tuna, peas, olives, pickles and eggs...toss lightly to mix trying not to break up the tuna to much.
  • Step 2
    In another bowl, whisk all of the dressing ingredients. I taste and adjust seasonings if needed. I usually have it right on as far as taste...
  • Step 3
    Pour the dressing over the Pasta mixture...toss lightly to blend well.I usually wait till right before serving to add sliced eggs and paprika, in case it needs more dressing. Chill for at least 2 hours before serving. Garnish with slices of egg and paprika. Enjoy! It's delicious.
