Once again from that infamous red and white checkered cookbook, but with modifications. My oldest always craves this during summer. It's a perfect picnic salad. But keep it iced, it spoils!

Ingredients

  • 1/2 c
    creamy ceasar salad dressing
  • 7 medium
    red skinned potatoes, diced and boiled till tender.
  • 3/4 c
    diced celery
  • 1/3 c
    sliced green onions (scallions)
  • 4
    hard boiled eggs
  • 1 c
    mayonnaise
  • 1/2 c
    sour cream
  • 1 1/2 tsp
    yellow mustard

How to Make Sour-Cream Potato Salad

Step-by-Step

  1. Pour salad dressing over warm potatoes; chill 2 hours (or overnight). Add celery and onion. Chop egg whites; add.
  2. Sieve yolks; mix with mayonnaise, sour cream, and mustard; fold into salad. Add salt and celery seed to taste. Chill 2 hours.
