Once again from that infamous red and white checkered cookbook, but with modifications. My oldest always craves this during summer. It's a perfect picnic salad. But keep it iced, it spoils!

Ingredients

  • 1/2 cup creamy ceasar salad dressing
  • 7 medium red skinned potatoes, diced and boiled till tender.
  • 3/4 cup diced celery
  • 1/3 cup sliced green onions (scallions)
  • 4 - hard boiled eggs
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 1/2 teaspoons yellow mustard

How To Make sour-cream potato salad

  • Step 1
    Pour salad dressing over warm potatoes; chill 2 hours (or overnight). Add celery and onion. Chop egg whites; add.
  • Step 2
    Sieve yolks; mix with mayonnaise, sour cream, and mustard; fold into salad. Add salt and celery seed to taste. Chill 2 hours.
