This recipe originally came from a ladies church cookbook from First Assembly of God in Cedar Rapids, Iowa. It's not your typical mustard based potato salad.

Ingredients

  • 4-5 cups cubed, red potatoes (cooked)
  • 1 bag shrimp (small or medium is fine)
  • 2 tablespoons lime juice
  • 1 clove garlic
  • 1/2 cup celery, diced
  • 1/4 cup green onion, finely diced
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise (not miracle whip)
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon crushed tarragon
  • 1/4 teaspoon white pepper

How To Make shrimp potato salad

  • Step 1
    Rinse shrimp, mix with lime juice and chill.
  • Step 2
    Rub salad bowl with garlic clove.
  • Step 3
    Mix everything (but potatoes) well.
  • Step 4
    Salt potatoes to tasted.
  • Step 5
    Gently stir in potatoes.
  • Step 6
    Refrigerate. This potato salad needs a few hours in the refrigerator for best taste.
