  • 5 c
    potatoes, peeled, cooked and cubed (about 6)
  • 1 c
    sliced celery
  • 1/2 c
    chopped onions
  • 1/4 c
    chopped red pepper
  • 2
    hard bolied eggs, chopped
  • 2 Tbsp
    chopped sweet pickles
  • 1/2 tsp
    dried parsley
  • ·
    salt and pepper to taste
  • DRESSING

  • 1 c
    light mayonnaise
  • 1/4 c
    light sour cream
  • 1 1/2 Tbsp
    vinegar
  • 2 Tbsp
    sugar
  • 1 Tbsp
    mustard

How to Make Light Potato Salad

Step-by-Step

  1. Combine dressing ingredients and set aside.
  2. In a large bowl, combine all salad ingredients.
  3. Toss dressing with salad. Refrigerate before serving.
  4. Note: If using Miracle Whip instead of mayonnaise, omit vinegar and use only 1 scant tbls. sugar.
