Ingredients
- SALAD
- 5 cups potatoes, peeled, cooked and cubed (about 6)
- 1 cup sliced celery
- 1/2 cup chopped onions
- 1/4 cup chopped red pepper
- 2 - hard bolied eggs, chopped
- 2 tablespoons chopped sweet pickles
- 1/2 teaspoon dried parsley
- - salt and pepper to taste
- DRESSING
- 1 cup light mayonnaise
- 1/4 cup light sour cream
- 1 1/2 tablespoons vinegar
- 2 tablespoons sugar
- 1 tablespoon mustard
How To Make light potato salad

Step 1Combine dressing ingredients and set aside.

Step 2In a large bowl, combine all salad ingredients.

Step 3Toss dressing with salad. Refrigerate before serving.

Step 4Note: If using Miracle Whip instead of mayonnaise, omit vinegar and use only 1 scant tbls. sugar.
