  • 1 Tbsp
    canola oil
  • 4 Tbsp
    real bacon pieces, lower fat and sodium
  • 3 Tbsp
    onion, chopped
  • 1/2 c
    cider vinegar
  • 1/4 c
  • 5 Tbsp
  • 1/2 tsp
  • 1/4 tsp
  • 1/2 tsp
    dry mustard
  • 1 Tbsp
    prepared yellow mustard
  • 1 Tbsp
  • 1/3 c
    cold water
  • 3/4 tsp
    dried parsley
  • 6 - 8
    medium potatoes

How to Make Light German Potato Salad


  1. Peel and cook potatoes. Slice or cube and set aside.
  2. Add canola oil and 1 tablespoon of bacon pieces to a pan. Heat until the bacon pieces start to sizzle and add chopped onions.
  3. Cook onions for 5 minutes and add the vinegar, 1/4 cup water, sugar, salt, pepper, mustards and parsley. Bring to boiling.
  4. Turn down heat. Dissolve flour in cold water and slowly add to liquid, stirring constantly. Cook until thickened.
  5. Pour over potatoes and stir in the remaining 3 tablespoons of bacon pieces. Toss to mix well.
  6. Can be served hot, cold or at room temperature.
