Ingredients
- 1 tablespoon canola oil
- 4 tablespoons real bacon pieces, lower fat and sodium
- 3 tablespoons onion, chopped
- 1/2 cup cider vinegar
- 1/4 cup water
- 5 tablespoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon dry mustard
- 1 tablespoon prepared yellow mustard
- 1 tablespoon flour
- 1/3 cup cold water
- 3/4 teaspoon dried parsley
- 6 - 8 - medium potatoes
How To Make light german potato salad

Step 1Peel and cook potatoes. Slice or cube and set aside.

Step 2Add canola oil and 1 tablespoon of bacon pieces to a pan. Heat until the bacon pieces start to sizzle and add chopped onions.

Step 3Cook onions for 5 minutes and add the vinegar, 1/4 cup water, sugar, salt, pepper, mustards and parsley. Bring to boiling.

Step 4Turn down heat. Dissolve flour in cold water and slowly add to liquid, stirring constantly. Cook until thickened.

Step 5Pour over potatoes and stir in the remaining 3 tablespoons of bacon pieces. Toss to mix well.

Step 6Can be served hot, cold or at room temperature.
