Creamy Stuffed Baked Potatoes
4 largebaking potatoes
8 ozcarton of sour cream
2 tspprepared horseradish
·freshly ground pepper to taste
1 cshredded cheddar
How to Make Creamy Stuffed Baked Potatoes
- Scrub the potatoes thoroughly and rub skins with oil; bake at 400 for 1 hour or until done.
- Allow the potatoes to cool to touch. Slice each potatoe legnthwise in half; carefully scoop out pulp, leaving shells in tact. Mash remaining ingredients together with pulp, except for cheese. Stuff shells with potatoe mixture; place on a baking sheet. Sprinkle with cheddar cheese; bake until cheese melts. Yield 4 servings.
